Chick Pea Tiny Tots

We all know tater tots are a favorite with children, so why not put a healthy twist on them? Toss the potatoes and add the chick peas, these are sure to be a crowd pleaser!

Ingredients:

1.5 lb. yams, raw

3/4 chick peas, canned

2 tbs vegetable oil

1/2 tsp salt

1/4 tsp white pepper

1/2 tsp onion powder

1/2 tsp ground cinnamon

Directions:

  1. Steam or boil yams until barely tender, approximately 15 minutes, let cool. Peel. Shred yams using course blade (1/4″ to 11/32″).
  2. Puree chick peas, including liquid until smooth
  3. Combine shredded yams and pureed garbanzo bean with remaining ingredients.
  4. Spray Sheet pans with Pan Spray
  5. Using #40 scoop, scoop 1 inch apart on prepared sheet pans.
  6. Bake at 400° for approximately 10-12 minutes, until starting to brown.
